The famously flat founder looks like it would be more at home in a Picasso painting than on the seafloor. But the lean, white meat beneath those scales tastes like a masterpiece - delicate, mild and sweet (and decidedly non-fishy) - and packed with Omega-3 fatty acids which give your heart and brain a boost. A sustainable seafood choice, we deliver our wild-caught flounder skinless.

Keeping It Fresh

Stays fresh up to 24 hours in the fridge but should be cooked and consumed as soon as possible.

Preparation

Flounder is a thin, white fish that is terrific pan fried or broiled with butter, garlic and a splash of lemon. Get creative by rolling it around your favorite stuffing. It bakes up in minutes and makes an easy weeknight meal.

Rinse and pat flounder dry, then season with salt and pepper. Butter or oil a baking dish and bake in a 400°F oven for 10-15 minutes.

Pan fry in a hot skillet with oil or butter for 3-4 minutes per side.

Place on a covered steaming rack for 10-12 minutes. Top with scallions, ginger, soy sauce and sesame oil for a real treat.

For stuffed flounder, bake in a 375°F–400°F oven for 20-30 minutes until the filling is golden and the fish opaque and flaky.
