Our native littlenecks star on top restaurant menus near and far. It's something about their perfect balance of sweetness and brine. Serve on the half shell or steamed in beer. These are well-endowed clams we've classified as "selects."

Keeping It Fresh

Product Arrives Fresh

Can be stored in the refrigerator 2-3 days but ideally should be consumed as soon as possible.

Unshucked clams should last about 2-3 days in the fridge if you store them right. The key is to keep your littlenecks cold and moist. Place the clams in a colander or bowl, cover with a wet dish towel and store in the bottom of the fridge. Do not put clams directly in water or in a closed plastic bag. Keep them cold until you are ready to shuck or cook. If you are serving raw littleneck clams on the half shell, make sure they are resting on a bed of ice until consumed. Discard any uncooked clams that are open and don't close when tapped.

Preparation

Our local littleneck clams are a raw bar staple. Just add a little cocktail sauce or mignonette to heighten the flavor. Here are a few other ways to cook fresh clams:

Always start by rinsing the clams under cold water to remove any sand, grit or algae. 

STEAMED Put clams into a lidded pot or pan, then add a splash of water, wine, beer or chicken stock. Cover and cook at a gentle simmer for 5-7 minutes over medium heat. Give the pot a shake to help them open up. Remove to a bowl with tongs when done.

BAKED/BROILED Place clams on a baking sheet in a pre-heated 450 degree oven for 10-15 minutes or broil for 3-4 minutes. You can also place clams on the half shell and top with a dab of butter, minced garlic and bread crumbs – same bake/broil timing applies.

GRILLED Place clams directly on the grill over medium heat for 5-10 minutes. Remove with tongs and rest in a bowl for 5 minutes to catch all the yummy clam juice.

Discard clams that do not open when fully cooked.
