If the lobster is cooked properly, a six-pound lobster will be just as delicious as a 1 ¼ pound lobster. But care must be taken not to overcook any lobster as the meat will toughen quickly. Steaming is the best and most forgiving way to cook a jumbo lobster.

The lobster are collected from the traps, placed in boat holding tanks and delivered to market daily. Since the live harvest varies from month to month, lobster prices fluctuate with supply and demand.
