Handling Live Lobster: Live lobsters need to be kept alive until cooked to prevent deterioration. They should be cooked the same day they're delivered . Until ready to cook, store as cold as possible in the container they came in. Pack with frozen gel packs or place in a refrigerator. Add damp newspaper to keep them moist. Never store live lobster on ice or in tap water. Fresh water will kill them.
How to Steam Lobster: Steaming is a more gentle process of cooking the meat and it preserves more flavor and tenderness. Steaming is also more forgiving on the chef since it is harder to overcook in a steam pot. For true lobster lovers, steaming is the way to go. So let's get started cooking.
